Classic Meringues

I found this recipe at my favorite magazine Vegetarian Times.
Pretty easy to prepare, but takes long time to bake. Last time I was making them, I decided to cut 1 hr and raised temperature to 350, and after 7 min they almost got burned! So try not to do this unless you’re in a hurry

You need
2 egg whites
1/8 tsp cream of tartar
6 tbsp sugar
1/4 tsp vanilla extract
1 pinch salt
1/4 cup confectioner’s sugar

The preparation process is a little different then the magazine suggests, but I make it easier

Start the oven on 225F.
Separate egg whites, start beating them with the cream of tartar. I stop the mixer, add 1 tsp of sugar, then continue to beat, until I have 6 tsp added. Beat a little more then.

Then add vanilla extract, 1 pinch of salt, and while beating the eggs, add confectioner’s sugar.

Beat until it’s all very thick.

Line the baking sheet with parchment paper, and using a tablespoon, try to make a meringue that looks decent.

This recipe suppose to make 15 meringues, I came up with 12, go figure.

And then the “best” part – baking them for 2 1/4 hours!

Per meringue – 30 cal, 7g sugar, not too bad!
